Mezcal Unión’s Uno Joven is a glorious and gentle mixture of black pepper, pine needles, citrus, vanilla, waxy candle smoke and artichoke hearts roasted in butter. Sip it alongside tacos to intensify that chilli heat or mix it into any cocktails you’d usually use Tequila in to add more depth.
Crafted in San Baltazar Guelavila, Oaxaca, by Mezcalero Pedro Hernández; he uses 8-year-old Espadín and 20-year-old wild Cirial agave. The piñas are roasted in pits for 3-4 days, they are then crushed and the juice is fermented, before being distilled in log-fired copper stills.Mezcal is typically made by small-scale producers in mind-bogglingly tiny batches.
