Los Javis Espadin is made with agave Espadin in Santiago Matatlan, Oaxaca. The agave used to make this mezcal were roasted in an underground oven, crushed by horse drawn tahona, fermented with open air yeasts, and double distilled in a copper pot still.

Nose- Warm soil just after a fresh rain, newly sprouted grass, and smoke
Palate- sweet agave with hints of vanilla and soft tang of orange zest that leaves a faint bitterness on the palate.
Finish- A dry, tart flavor lingers before closing with a well-rounded earthiness like crisp greens that have just been harvested.
