Argyros' Cuvée Monsignori is made from organically farmed, ungrafted Assyrtiko vines which are more than 200 years old - the oldest on the estate. Fermentation takes place in stainless steel vats, partly with wild yeasts. The wine is then aged on its lees in stainless steel for 11 months before bottling. The balance is superb, with remarkable freshness, power and depth. This is one of the finest wines on Santorini from a master winemaker.
