Dingle Limited Edition 2 is a 13 Year Old Single Malt Irish Whiskey that showcases the exceptional cask selection and maturation expertise of Head of Maturation, Paddy Foley. This limited release has been matured for 11 years in bourbon barrels before receiving a finishing period in carefully selected Madeira casks, creating a whiskey with remarkable depth, balance and individuality.
Bottled at 51.3% ABV, non chill filtered and with no added colour, this release captures a unique moment in Dingle Distillery’s journey. Each of the 1,632 individually numbered bottles is presented in a collector’s presentation box with bespoke detailing and accompanying tasting notes.
The Madeira cask finish brings rich layers of sweet honey, sun dried fruits and candied citrus on the nose, followed by notes of toffee and vanilla. The palate is full and complex, offering flavours of sticky dates, dark chocolate, spiced oak, clove and cinnamon. A long, elegant finish lingers with delicate spice, nutmeg, sugar syrup sweetness, orchard fruits and a gentle touch of toasted oak.
