A half bottle of sherry from Emilio Lustau, matured under a veil of yeast, in cool, humid air in a process known as biological aging. The palate is light and fresh, with notes of dried fruit, sea salt, chamomile and toast.
This is a classic five year old: young, lively palate with fennel and mineral notes. Sings of the seaside.
