To produce this Sake Akashi-tai use a Gohyakmangoku Rice and lightly mill 40% of the original Rice so only 60% is used for the production.
The result is a much lighter style Sake which is refreshing with notes of Citrus Lime and Lemon and just a hint of Straw in the undertone.
The Akashi Sake Brewery
Fuller in body and with a higher alcohol content, our Tokubetsu Honjozo Genshu offers more concentrated flavours. This sake can be enjoyed on the rocks or in cocktail making, revealing a greater depth than the Tokubetsu Honjozo.
Tasting Note - Pink grapefruit, beeswax and white floral undertones on the nose. A creamy, rich palate with tropical fruit flavours balanced by a subtle umami note. A clean and long finish.
Pairing Suggestion - Cheese plates, Mushroom or meat pie, Vegetable and seafood tempura, Grilled meat
