Tasting notes: The Merlot greets you with a nose with cherry, blackcurrant and liquorice. On the palate, it is well structured, fresh, bright and with overtones of cacao and tobacco. We recommend decanting this wine before serving.
Vinification: 30-to-35-day-long fermentation on natural yeasts in tanks to help tannins polymerize, making them smoother. Regular remontages and even délestages (wine is run out of the tank into another, and then pumped over the cap of grape skins) ensure enough aeration to the wine.
12 months in old Dujac oak. Blended in tanks and bottled unfiltered after a light fining.
