100% Pedro Ximénez
Natural sweet wine that takes its name from the grape variety with which it is made, although it is also known as raisin wine. It is the sweetest wine in the range.
Oxidative aged wine, obtained from the partial fermentation of musts from the Pedro Ximénez grape variety previously dried, with about 2-3 years of aging using the traditional solera and criadera system in American oak barrels. It is very sweet, has an alcohol content of 15% vol.
Dark mahogany colour, dense and unctuous, it presents powerful notes of fresh raisins and other notes of drying. On the palate, it is intense, luscious, and tasty, with an excellent acid-sweet balance that makes it fresh and harmonious, giving it great volume and persistence.
Food Pairing: A modern-style Pedro Ximénez like this one invites creativity in pairing and shouldn’t be limited exclusively to desserts. Appetizers, cheeses, foie, or stuffed meats will pair perfectly with this wine.
